Summer is here and that means one thing; it's ICE CREAM season!
We've got ice cream on the mind, especially since it's so easy to make with our Goodmylk Frozen Concentrates. Of course, we are figuring out all the ways to make it as healthy as possible so we can work it into every meal.
This Green Mint Ice Cream with hidden veggies seemed like the perfect place to start.
Here's the recipe:
1 frozen banana
4-5 chunks frozen cauliflower
1 handful spinach leaves
3-4oz Little West
"The Clover" juice (kale, cucumber, celery, spinach, pear, cilantro, mint
5 drops of mint extract
Drop frozen banana, cauliflower, spinach and The Clover into your blender and blend until smooth.
Add in FROZEN Goodmylk Concentrate and mint drops.
Blend until ice cream consistency.
* You will need to use your Vitamix plunger to move the ingredients around while blending as it will be really thick.
Pour into your favorite bowl and enjoy. Makes 3-4 servings.

TBH we've been disappointed with the plant based ice creams on the market. They're either filled with nasty ingredients or are super healthy and taste nothing like ice cream.
