Oat milk has, in less than five years, completely changed the alternative milk game. According to a market analysis report published by Grand View Research, the global market for this once unheard of beverage is now expected to grow nearly 10% by 2027, putting it in the running against almond milk for popular alt milk available. These predictions and figures hold especially true in the U.S., where oat milk sales skyrocketed over 300% from 2019 to 2020.
They should really call it “highly processed gum and flavorings” milk.

What made you switch gears from Wall Street banker to founder of Apothekary? What skills transferred over?
I originally started my career working at Goldman on the trading desk. Loved it, learned a ton, and worked with some of the smartest people that I know to-date (and investors of Apothekary!). Burnt out and thirsty for change, I moved to Mozambique and Bali for a year to learn about entrepreneurship, agriculture and Ayurveda where I became certified after an intensive full-time 30-day training in Ubud. It was intense!
Tell us a little about your journey to Autoimmune Sisters & Clean Cuisine:
In January 2010, at the age of 28, I was diagnosed with Hashimoto’s Thyroiditis just a few months after my daughter was born. It answered a lot of questions about symptoms I had been experiencing since high school. For years, I battled through my diagnosis and symptoms alone because I had not met anyone else with my same autoimmune disease. In October 2018, after much encouragement from my mom, I started the@AutoimmuneSistersInstagram account. The sole purpose was to share part of my story in hopes to find other women that were just like me. In less than 2 years, this little account grew to more than 15,000+ (96.2% are women). We now have a website that providesautoimmune disease information,blog articles by women with autoimmune disease,and the best part:stories by other womenwith an autoimmune disease diagnosis.

Dipotassium phosphate is an ingredient you’ll find in many boxed milks that gets little attention. Sure, maybe it’s not as bad as Canola Oil or Glyphosate (at least for now) but it still doesn’t belong in something marketed as healthy.
First, yuck. But real talk; if I’m going to have canola oil, I want it to be in something that’s so deep fried and delicious I already know the havoc it’s going to cause and I’m okay with it for the 6 minutes of pleasure that will come from eating it.

It was too hard to great coffee on campus so they built their own solution to serve high-quality cold brew to their classmates. Fast forward totoday, this student-run model has expanded to four campuses and has a thriving online store. Lucas is now the Chief Product Officer at BrewBike and leads product development for the company's e-comm and campus businesses. #mythbusters: almond farms aren't hurting the planet.
I'm sure you've heard the negative rumors floating around about almonds, water usage and the bee population. We dug deep into these issues and here's what we found:
While almond trees do use a lot of water, almond farmers are incredibly efficient with their water use. How? Instead of using irrigation (which can have negative environmental impacts from overwatering), almond farmers use ground or recycled water. That means smarter water use then most crops.
